Twelfth-day cake

This particular fruit cake is unique in that it is made without the use of molasses, resulting in a white-colored cake. It is traditionally prepared several months in advance and is served on Epiphany, which falls on the twelfth day after Christmas. The cake is typically covered with a layer of almond paste and a thin white icing, adding to its flavor and texture. Often served alongside this cake is a warm apple drink known as lamb’s wool, creating a delightful combination of flavors for the palate.
