Cornmeal is a coarse flour ground from dried maize (corn) kernels. It is popular in the Northeastern region of the United States, especially in the late 19th century, and is now more commonly used in the South. It can be boiled with milk and served alone or with peas, beans, salt pork, and other ingredients, often as a substitute for potatoes. In England, the word may also refer to whole kernel corn.
