Salsify

A long, white root vegetable with a taste that is somewhat similar to oysters. It belongs to the chicory family and is often prepared in the same ways as carrots or parsnips. It is also known as oyster plant.


Presenting itself as a white root vegetable, this intriguing plant bears a striking resemblance to a parsnip in terms of its shape. Boasting a slightly sweet flavor, it is believed to evoke the delicate taste of oysters, which aptly contributes to its common name. This remarkable vegetable exhibits excellent storage capabilities, remaining fresh and viable throughout the winter months when left in the ground or carefully preserved in sand. Additionally, a black variation of this vegetable exists, known as Scorzonera, which shares the same characteristic of a long and tapering root.
