Rue

This herb, known for its bitterness, is one of the most visually striking as well. It is an evergreen shrub with thick, blue-green leaves and small, golden, star-shaped flowers. Although it has a strong, unpleasant odor and a bitter taste, it adds a musty flavor which can be surprisingly appealing when used in small amounts. It is often added to chicken salad or soup, and some Scandinavians even crush a few leaves and put them between slices of buttered bread to create a unique sandwich.
