Royale

A soup garnish known as a quenelle is made from a mixture of liquid, such as cream or consommé, along with a purée of chicken, fish, or other ingredients. The mixture is thickened with egg yolks, strained into a mold, and poached. Once cooled, the preparation is removed from the mold, sliced, and shaped using fancy cutters to add a decorative touch to the soup.
