While roses are not typically thought of as herbs, they possess a uniquely exotic flavor that makes them an unparalleled ingredient for culinary purposes. The petals of a single rose are often utilized in the creation of fruit cups and jellies, while rose-flavored tea is also a popular choice. In addition, honey can be infused with several rose petals per pound, and a delectable sweet herb and rose vinegar is a perfect accompaniment to fruit salads. Any variety of rose can be used, provided that it is fresh and fragrant. However, three particularly exceptional herb roses are the Damask, Provence, and Eglantine (also known as sweetbrier).
