Phenol or phenyl oxidases

Copper-containing enzymes responsible for the browning of fruit at the cut surface. These enzymes can be inhibited by ascorbic acid or by heating.


‘Alcohol-like’ compounds that have the hydroxyl group bound to a benzene ring.


A strong disinfectant used for external use.


Disinfectant used to clean wounds and, in various lotions and ointments, to treat inflammations; it is poisonous if taken internally.
