    To fasten or insert an object at even intervals into a surface, as exemplified by cloves inserted into a ham, or the technique used in specific French dishes of adding petite portions of fat into incisions made in lean meat.  

  • Strip steak

    A superior section of beef that is composed of a porterhouse steak from which the bone and fillet have been meticulously removed, alternatively referred to as a New York cut in the western region.
