Oxalis root

A minuscule, tuberous root vegetable resembling a potato, belonging to a specific type of sorrel that thrives in Peru and Bolivia, and bearing a subtle yet pleasantly sweet taste. These tubers are at their finest after being stored for a few days post-harvest and may be cooked in a manner similar to potatoes. They are also known by the names oca and okra.
