To make uncooked almond paste, grind blanched almonds with powdered sugar in a food processor until fine. Then add almond extract and enough egg whites to make a soft and pliable dough. Divide the paste into portions and add food coloring if desired. Roll out the paste and layer different colors on top of each other, then cut into small shapes. Alternatively, roll the paste into a log shape, jelly-roll fashion, and slice into rounds. This uncooked almond paste can be used to decorate cakes or eaten on its own.
