Lancashire cheese (pronounced “LAN-kə-shər”) is a delicately-flavored English cheese that shares many similarities with Cheddar. Its texture is mildly crumbly and its distinct orange-red hue comes from the addition of annatto. This cheese is well-known for its use in Welsh Rarebit, but it also makes for an excellent dessert cheese.
