Garbure

Garbure is a hearty cabbage soup that is almost like a stew, originating from the southwestern region of France. During the appropriate season, fresh fava and haricot beans are used to prepare this soup. In the winter months, dried beans are used as a substitute. A preserved piece of goose or duck is usually added to enrich the soup, which has a thick consistency that can support a spoon. Alternatively, if you have a duck or goose carcass available, you can add that to the soup instead.
