Citron

A fruit that bears similarities to lemons in appearance, but not so much in acidity, is the cedrat. This large fruit is endowed with a thick skin that provides adequate protection to its juicy interior. Cedrat rind is often preserved or candied, and then utilized in creating fruitcakes and mincemeat.


Citron is a fruit that bears a resemblance to lemons, but is considerably lengthier and more substantial in size. Its rind is often utilized in crystallized form in various culinary applications. Once chopped, it can be added to an array of baked goods such as cakes, puddings, and cookies. Citron peel is also frequently used as a traditional garnish for Madeira cake. While it is possible to make citron peel at home, it can also be conveniently purchased in a ready-to-use form.
