Casserole cooking

Casserole is the name given to the protracted and gradual method of cooking food in a heatproof dish, covered, within the oven. This technique, which results in extremely tender and nutrient-dense dishes, is ideal for preparing meat – especially the less desirable cuts – fish, and vegetables. It is a cost-effective method that conserves energy, requiring only a low heat despite the extended cooking time. The slow cooker, or crock pot, is especially suited to this style of cooking.
