Angels on horseback

Oysters which have been enveloped by ribbons of bacon or ham and subsequently grilled to a crisp are referred to by the moniker of “devils on horseback” or “pigs in blankets”.


The oysters should be gently simmered in their own flavorful liquid until their edges gracefully curl. Next, carefully encase each oyster with a delicate slice of thinly cut bacon, securing them in place by threading them onto a skewer. Proceed to cook the assembled skewers under high heat until the bacon reaches its desired crispness. In the meantime, prepare petite circular pieces of toast to act as a sturdy foundation. Artfully position two bacon-wrapped oyster rolls atop each toast round, allowing them to harmoniously blend flavors. To add a touch of visual appeal, garnish the delectable ensemble with sprigs of fresh parsley. Lastly, present the dish to eager diners while it is still steaming hot, ready to be savored and enjoyed.
