Derby cheese

Derby cheese, a type of cheese that originated in the northern regions of England, is still more commonly accessible in the North than in the Southern regions of the country. This cheese boasts a soft texture and mild flavor, with a subtle honey hue. Since the cheese darkens and intensifies in flavor as it ages, it is frequently marketed when it is relatively young. In addition to the classic Derby cheese, a sage-infused version known as Sage Derby is also available, which is colored and seasoned using chopped sage leaves. It is customary to associate this type of cheese with the Christmas season in England.
