Demi-glace

A concoction of Espagnole sauce, enriched with meat glaze, meat extract, or alternatively, brown or white stock or clear soup, constitutes the essence of Demi-glace. The sauce necessitates thorough reduction to obtain its optimal consistency, and a finishing touch of sherry or Madeira, as per preference, may be added. This sauce is customarily served alongside premium meat-based dishes.
