Maid of honor

A luscious miniature cake, baked in a muffin tin that has been lined with puff pastry. This delicacy hails from Surrey County, originating during the reign of Queen Elizabeth I. Historical recipes for this pastry feature ingredients such as curds, butter, brandy, sweet and bitter almonds, eggs, lemon, and even potatoes.

These dainty British tarts, known as “maids of honor,” boast a delightful filling of milk curds infused with various flavors. With origins tracing back to Henry VIII’s palace, these tarts gained popularity among the queen’s maids of honor.
