Madrilene

The term “Madrilene” literally means “in the style of Madrid,” but is commonly associated with a tomato consommé that can be served hot or cold, often in a gelatinous form. Jellied Madrilene is generally served in fragmented pieces.


The term “tomato aspic” is used to describe various food preparations infused with tomato flavor, with a particular emphasis on a jellied consommé presentation.
