Cock’s Comb

The fleshy, red, and vascular protuberance situated atop a rooster’s head, commonly referred to as its “comb”, is often utilized as a culinary component. In particular, it is cooked and employed as a decorative topping in certain lavish French stews and ragouts. Typically, it is served in combination with the testicles of the rooster, known as “cock’s kernels”.
