    For a quick dinner, try this simple recipe:

    One pot chicken and rice

    Ingredients (4 servings):

    • 1½ cups of basmati rice.
    • 4 chicken thighs.
    • 1 ½ teaspoons of Italian seasoning (basil, marjoram, rosemary, thyme, and oregano).
    • 2 teaspoons of smoked paprika.
    • 1 teaspoon of onion powder.
    • 1 teaspoon garlic powder
    • 2 tablespoons of olive oil.
    • 1 cup of chopped onion.
    • 1 tablespoon of butter.
    • 3 cups of low-sodium chicken stock.
    • Salt and pepper to taste
    • ½ cup of green onions to garnish.

     

    Preparation:

    1. Mix the Italian seasoning, smoked paprika, onion powder, garlic powder, salt, and pepper in a bowl. Reserve.
    2. Rinse the rice until the water is clear. Set aside.
    3. Season the chicken thighs with the herbs and spices mixture. Make sure chicken thighs are completely covered with the seasoning.
    4. Heat olive oil to medium-high temperature in a saucepan. Add chicken and cook each chicken side for three minutes or until they are golden.
    5. Take out the chicken from the saucepan and set aside.
    6. Incorporate chopped onions into the saucepan; add butter and rice, and sauté for five minutes.
    7. Pour the chicken stock and combine very well.
    8. Place the chicken thighs over the rice and put a lid on the saucepan.
    9. Reduce heat and cook for 20 minutes.
    10. Serve with chopped green onions at the top.
